Berry Chia Pudding

Promise: This is the fastest way to load your kids up with omega 3s and fibre

Make a jar of it Sunday night and use it through the week in lunchboxes or as dessert. 


1 c heaped of frozen berries or cherries
1/4 c chia seeds
1 c coconut milk
2-3 tbsp pure maple syrup or honey
1 tsp vanilla

Put the frozen fruit into a snap-lock bag and bash it with a meat mallet or rolling pin (I keep the bag in the freezer to re-use each time I make this)
Tip into a large jar and add chia seeds; mix well together with a long spoon, then add milk. Again, mix well together, put on the jar's lid and shake for a minute
Open, add sweetener and vanilla and then shake again for 30 seconds. Let set in the fridge for at least 4 hours
