When something so delicious is full of healthy fats, vitamins and minerals: Bliss.

My best friend taught me this recipe decades ago and I've never found a better one. Of course perfectly ripe avocados are the first step to success with this dish. (Can’t go wrong with some Hawke’s Bay Hass beauties.) This recipe is beautiful with tortilla chips, ideally homemade ones from cutting up some tortillas, sprinkling with salt and baking. But Proper Tortilla Chips are worth a splurge. Add it to a Mexican rice bowl, taco, burrito or  omelette.


2 avocados, diced
1 large garlic clove, minced
1 tbsp lemon juice
1/2 tsp salt (and more to taste)
1 small tomato, finely diced
1-2 tbsp fresh coriander, chopped
optional, chilli pepper, finally diced

Add avocados, garlic, lemon and salt into a small bowl and mash well with a fork. Stir in final ingredients; add more salt, as desired.
